Ingredients
Method
- Preheat oven to 425 degrees.
- Remove stems from spinach leaves.
- Dice cooked chicken into 1/4" chunks.
- Hull and slice strawberries into three slices.
- Brush each pizza crust with olive oil (brush the entire crust).
- Arrange spinach leaves over crust, leaving a 1/4"-1/2" edge uncovered all the way around.
- Arrange chicken over spinach.
- Sprinkle each crust with goat cheese.
- Arrange strawberry slices on top of cheese.
- Drizzle with balsamic vinegar.
- Bake for 12 minutes or until crust is browned.
Notes
This will work with any balsamic vinegar, but if you can find strawberry balsamic vinegar, it is really great. It seems to me that every touristy town has an olive oil and vinegar shop, and most of them have strawberry vinegar. I also have found that most of these stores ship, so if you aren't going away any time soon, you should be able to get it shipped to you. If you can't find it, don't worry, it's good with regular balsamic too!
